I am obsessed with this cantaloupe salad. And melons in general. France has made me fall in love with these sweet decadent sun kissed fruits. And melons from the South of France do not taste like the picked-while-still-unripe American grocery store variety. I look forward all year to when these orb like juicy fruits will appear in the markets... and I can down an entire melon (albeit smaller than American ones) in a single day.
Cantaloupe Health Benefits
Beta Carotene: melons, especially the orange kind, are exploding with beta carotene ( turned into Vitamin A when digested) and which is a nutrient building block of collagen and essential to skin formation and repair. Ingredients
1 cantaloupe
3 tablespoons (45ml) balsamic vinegar
Sprigs of chives/coriander/basil (or all three!), minced
1/4 - 1/2 cup (150 - 200g) feta cheese
Recipe
Cut cantaloupe into cubes and put into a bowl.
Add all the other ingredients and toss together.
