Spiralized vegetables is the best thing to happen to the health food scene since cauliflower crust pizza. It feeds into my philosophy that healthy food should taste just as good as all our favorite indulgent dishes. Nothing can ever replace pasta of course, even the best gluten free versions, but spiralized vegetable pastas offer the feel of the italian dish but with a lighter and more complex flavor that's better suited to those with digestive or metabolic issues. This dish combines sautéed carrot noodles with a tomato-cumin sauce. Personally, I would choose this as my sauce vehicle over "real" noodles any day.
Ingredients
1 serving
Carrots, 3-4
Tomato sauce, 1/2 cup
Cumin, 2 teaspoons
Curry, 1 teaspoon
Basil
S+P
Coconut oil or olive oil for sautéeing
Recipe
Spiralize the carrots and sautée in oil until softened
Add cumin and curry spices and gently mix into carrots
Add tomato sauce, basil, S+P and reduce slightly
(Can also be served with parmesan cheese)
