Chocolate mousse is the go to dessert for my boyfriend. Late night recording studio sugar cravings could be solved with a cup of fresh French cream, a bar of dark chocolate and a little heat and whisking. The result is chocolatey perfection, except for the fact that my boyfriend has much better self control than I do. After too many instances of him asking "uhh where did my chocolate mousse go..." I realized that I had to come up with a healthier option, for my sake... And make larger batches. My vegan avocado chocolate mousse (mousse au chocolate à l'avocat) is so effective he couldn't even tell the difference.
Ingredients
Avocados, 4-5 ripe
Dark chocolate, 100 grams
Cocoa powder, 1/4 cup
Agave, 2 tablespoons
Honey, 2 tablespoons
Coconut oil (virgin), 1/2 tablespoon
Salt, Sprinkle
Recipe
Purée avocados with agave and honey.
Melt chocolate au bain marie (place chocolate in a glass bowl inside a saucepan of boiling water).
Add 1/2 tablespoon of coconut oil (virgin) to melted chocolate and stir.
Mix melted chocolate into avocado mixture.
Add cocoa powder and salt and continuing whipping until smooth.
*If you prefer your vegan avocado chocolate mousse to be more or less sweet or want a more intense chocolate flavor, you can play with the proportions of cocoa powder and honey and agave.
