I've discovered the magic of radishes since moving to France. Chilled and eaten plain and with a glass of sparkling water to bring out the crisp bite of the vegetable or on buttered toast as the French culinary tradition goes. In fact, the buttered toast topped radish dish is what inspired this. And this appetizer couldn't possibly be easier for how elegant and architectural it looks and I was even surprised by just how good these turned out. That perfect blend of deceptively rich but light, bitter sweet and crispy creamy. Whipped up feta cheese X cream cheese X sweet dried cranberries to offset the bitterness of the radish.
Ingredients
Dozen or so radishes (sliced)
1 part feta cheese (microwave melted)
1 part cream cheese, softened
Handful, nice quantity of dried cranberries, finely chopped
Salt, pepper, dash of agave
Recipe
Whip together melted feta and cream cheese. Add s+p and agave.
